With an expanding student population and growing excitement in the culinary program, LAN Associates designed a six-classroom addition to Leonia High School, as well as, a new state-of-the-art Culinary Arts Lab. As the program moves towards an “academy,” the Culinary Arts Lab is equipped with commercial equipment including; three compartment sinks, stainless steel counters, six-burner ranges with salamanders, and a variety of other restaurant grade appliances. The Lab contains six individual learning kitchens, as well as, a large instructional island. With a live-feed camera above, cooking preparation can be viewed on demonstration TV’s throughout the space. The center of the flexible environment can be rearranged for general instruction, additional counter space, or for serving and plating. To add to the modern culinary atmosphere, a large wall of glass between the lab and the corridor provides a display for the annual “Cupcake Wars” challenge and a creative breakout space for all classes. Beyond the design of the addition, a courtyard was created to provide unique learning opportunities. Combining a grilling station, herb garden, and small amphitheater, the courtyard can host outdoor culinary events, group lessons, and outdoor research. The classrooms also promote innovation and flexible learning, so collaboration can occur anywhere.
